As one passes through the historical Ston field and then enters the Pelješac Valley following the old Napoleonic road, a unique experience of the Ponikve Valley presents itself. Today, however, due to the fast road connection with the Pelješac Bridge, the Ponikve locality, and the new “Miloš Winery”, are exposed to angles, perspectives, and views that in the past only shepherds would have been able to observe.
The concept is based on the idea of a gateway, a temple to wine. The structure is set deep into limestone rock and consists of 3 volumes: a wine storage cellar, a ground floor for processing and barrelling, and a tasting room with panoramic views above. It demonstrates that modern production techniques can have minimal visual impact and intrusion on its historical habitus. The solution was a volume penetrating deep into the limestone hill, tunneling its way to the existing rock cellars of the family home, forming a connected, compatible, contemporary intervention. Materials are concrete and glass. A ventilated façade of artificial & natural stone permits the above ground structure to “breathe”. The green roof, 75% buried volume, and cross flow ventilation create exceptional energy efficiency & maintain a constant internal environment. External landscaping emphasizes indigenous greenery, with integrated shading & terraced garden areas.
